TOMATO SOUP

4 RASHERS BACON, CHOPPED
1 ONION, DICED
3 CLOVES GARLIC, CHOPPED

1 CAN CRUSHED TOMATOES
2 QUARTS CHICKEN STOCK
FRESH BASIL OR PESTO, TO TASTE
PEPPER, TO TASTE

RENDER BACON IN SOUP POT. WHEN ALMOST DONE, ADD ONIONS AND COOK UNTIL TRANSLUCENT.

ADD GARLIC AND COOK BRIEFLY.

ADD TOMATOES AND STOCK; BRING TO BOIL.

STIR IN CHOPPED HERBS OR PESTO. SEASON WITH PEPPER.

NOTE:

FRESH OREGANO OR THYME CAN BE USED INSTEAD OF BASIL.
