10-12 TOMATILLOS, HUSKED, WASHED, QUARTERED
1/2 LARGE ONION
3 CLOVES GARLIC
2 T LIME JUICE
2 TSP CUMIN
LARGE HANDFUL FRESH CILANTRO
1 TSP SALT

BLENDERIZE INGREDIENTS.

COOKING BEFORE USE MELLOWS OUT THE ONION, BUT YOU CAN USE THIS UNCOOKED TOO.

NOTES:

YOU CAN VARY THE HEAT BY THE NUMBER OF CHILIES AND WHETHER YOU SEED THEM OR NOT. SERRANOS GIVE YOU A SHARPER HEAT; ADDING A HABAÑERO CREATES A DEEP WARMTH. THE MAGIC BULLET IS GOOD FOR THIS.
